Agua de Jamaica
Makes 4 to 5 cups

1 cup jamaica concentrate (see below)
3 to 4 cups water

When ready to serve, dilute 1 cup concentrate with 3 to 4 cups water, or to your liking, and some ice cubes.

Makes about 5 cups

8 cups water
2 cups dried hibiscus or jamaica flowers, about 2-3 ounces, depending on how tightly you pack the cups
1 1/2 cups sugar, or to taste
2 tbsp fresh lime juice, or to taste

In a saucepan, pour 8 cups of water and place over high heat. Once it comes to a boil, add the jamaica flowers, simmer at medium heat for 10 to 12 minutes and turn off the heat. Let it cool down and strain into a heat proof glass or plastic water jar. Add the sugar and lime juice, mix well, cover and refrigerate.

It will keep in the refrigerator for at least 3 months.

I have a dear new friend from Guatalajara who just taught me about the wonderful uses of that flower in Mexico and made me some of the water last month but you showed me its many uses. I can’t wait to prepare her some of these recipes to surprise her.

My family makes Agua de Jamaica at home, but instead of boiling the jamaica flowers, we put them in a pitcher with water and let them soak overnight (after a quick rinse to wash the flowers). Not adding heat to them preserves the natural healing properties of the flowers (aids in circulation). We then pull the flowers out and sweeten to taste.
I hope this alternative is equally enjoyed by others.

Patis thank you so very much for the recipes I have been trying to find a recipe for the longest time and it reminds me when my family & I would go to mexico just to have some drinks and I could never find anyone that would give me the recipe. Your such a blessing I was watching tv and strolling through the channels ans saw you talking about the Agua de Jamaica and I was so happy I will be one of your fans from here on out I would like also learn how to make hochate drink I don’t I spelled it right it’s rice water please if you know the recipe would you be kindly to send it to me your my Hero Thank you so very much your such a Blessing !

Saw you show for the first time yesterday and am hooked. In fact, today I took my husband grocery shopping with me and we bought hibicus flowers, and tamarinds and as I am typing my hibicus flowers are simmering away and my tamarinds are soaking.
I have read through many of your recipes and am looking forward to trying many of them (so is my husband *wink*).

I made the concentrate and really loved the water. I’m planning on making the popsicles as well.

We love Jamaica in our house. Two cups of jamaica flowers comes to 2 ounces, though, not 6. The adding of lime is a good suggestion. Thanks.

Claro que si Pati. Estoy a punto de mandarles tu sitio a mi familia y amigos. ¡Los tacos estuvieron muy buenos! Lo único es que no tengo queso fresco ni aguacate… :( así que tuvimos que usar lo que teníamos.
