I stopped by the Today Show to make a few of the avocado snacks we’ll be eating in my house for the Super Bowl. With some help from Hoda Kotb and Kathie Lee Gifford, we ended up with quite a spread: Garlic Shrimp, Fennel and Orange Guacamole; Avocado, Roasted Asparagus and Cherry Tomato Salad; and Salmon topped with Greens, Bacon and Avocado. I was so proud to join the ONE Campaign and chef’s Andrew Zimmern, Hugh Acheson, and Nina Compton on Capitol Hill, where we advocated for bringing energy access to 50 million people in sub-Saharan Africa. I also appeared with Tom Hart, US Executive Director of ONE, on News Channel 8’s “Let’s Talk Live” to talk about the initiative.
